    "mis en place" is a little bit more than just doing your preparations in time. It means that you are staying in your place in the kitchen and doing all the preparations that you have to do, posistioning all the little pre-bowl ready to put your cuts of food toghether onto the heat of your hotplate, when the chef orders you to do so.

    When did quesadillas become "Tex-Mex?" Nothing personal aimed at any Texans here at this late date (well, not much, anyway), but what does Texas have to do with the Southwest? There was a time in the ancient past when Texas was in the southwestern part of this country, but for the last century or so, there have been three American states to the west of Texas, placing Texas pretty much dead center physically and in the deep South, culturally. Give us a break.

    Why AREN'T you sponsored by TFal? I bought the pro series skillets based on your recommendation and fucking loved them. I tried to buy another at wally world, and the "pro" version there is not nearly as good as what I was able to buy online. It was a regular cheap ass pan with some circles scratched in the bottom.
